they are designed to tell you mission difficulty and pay out. One star missions are considered the easiest and have the lowest payout of 500. Two stars are deemed harder (they just have a higher number requirement to finish them) and pay out 750 always. Three star missions are the “hardest” (still pretty easy) and always pay out 1000.
