Does anyone know of a good tool for editoing the UI Menus. Iv’e been doing this by hand using notepad and it’s a pian in the arse since I’m still learning the setup, altough it’s not that hard.

There isn’t one. Use the macros as defined in ui_menumacros.h though, they will make things quite easy for you.
Noob question of the year:
Where do i edit the GUI’s and are they editable without version mismatches?
Some of these menu files are in the “…\WET_Source\etmain\ui”-directory.
They have the ending “.menu” and are textfiles.
“menus.txt” is the file that is used to tell the game which of the menu-files to use.
The “menudef.h” and “menumacros.h” contain some definitions.
Try one of the following links for a pretty good syntax defintion. When you start working with them they can be a pain in the arse but they are really not that hard.

Whilst the above links are specific to QIIIA, the menu syntac still applies to other QIII based games. You can just forget about section three since ET only uses menus.txt and not the others
as arnout said however, use the menu macros, so much easier on the eye.

I made a .menu spec file for crimson editor a while ago (it colours the commands by “type” for easier reading)
I can upload it some where if peeps would like to use it…

So in other words: Custom menu’s simply don’t work on pure servers?
the menu’s that are not in-game, ie. the main menus can be changed locally (since your not connected to a server when you view them )

I’ve also included my shader spec’s too, simply install Crimson editor, and extract the zip into the crimson
folder.

indeed, and, if your running a server, DONT HAVE CUSTOM MENU Pk3’s in etmain/ , its causing enough confusion just with translations of the original menus.
In that case i won’t even bother. Wish SD would add something that can let u create custom menu’s that are client-side and will pass on th epure list.
theres no real point, ET’s hud, etc, is all in code and not these menus, so all u would change is the in game menu, which, is quite top notch anyway.
Custom vsay menus, as well as similar menus for spawn point and class selection could be pretty sweet (see also: tribes). Yes, I know you can do somewhat similar things with binds, but it is a pain and the results tend to have some ugly constraints.

what TS/Vent is for… use it for quick commands like an ingame server connecter
