I was wondering whether it was possible to take out certain classes and/or certain weapons for a map I’m making… I’m trying to make a knife fight tournament map, but I wish to restrict it so they can’t use anything but knives or cannisters…

Removing weapons is trivial.
Removing classes is less so, but wouldn’t take too much effort.
the dirty way: fill the map with small clip-weapon cubes…
that would allow players to fire their weapons, but shots won’t go far…
You don’t need a mod, afaik there are triggers which you can use to remove ammo from players. If you removed all ammo at all spawnpoints players would have no choice except to use the knife. It’s been done in q3a so I guess it should still work in ET, just don’t ask me what the name of the trigger is 
‘disabling’ the field ops is easy, either don’t make a tracemap or don’t make any sky 
For this, you need either a mod, or some really fancy scriptin’ stuff…I’ve never heard or seen that trigger which mindlink was talkin’ bout, but I’m looking for it…
I thought that clip-weapon didn’t allow players to get through?
clipweapon / surfaceparm sky combinations might work, have to try it though
Thanks for the hints guys… someone mentioned something about putting in a trigger to take away everyone’s ammo… and that sounds interesting… and I was thinking there may be a trigger to take away everyone’s chargebar, which would solve our field op problem (also medics healing themselves and the match NEVER ending)… I’m look for these things, but If you guys find anything, let me know. Thanks.

I’m afraid this can’t be done without a mod.
However I found this at the Q3map2 shader manual:
surfaceparm nodrop
When a player dies inside a volume (brush) marked nodrop, no weapon is dropped. The intend use is for “Pits of Death.” Have a kill trigger inside a nodrop volume, and when the players die here, they won’t drop their weapons. The intent is to prevent unnecessary polygon pileups on the floors of pits. This keyword is found in “common/nodrop” but you may want to specify this on certain shaders (fog volumes in pits, for example).
Haven’t tested it though…
there is a knife only already installed into et g_knifeonly will activate it … then everyone will have a knife but the medics… who also have needles
limiting classes can be done via script… you may not be able to not stop them from selecting that class however you can have the script kick them for being that class
only a mod can stop people from being a certain class… and as far as I know… my mod is the only one to do so
so if interested go ahead and dl my mod… you can limit classes and have knife only fights
