I can answer 2). Use the in game speaker-editor (check the LDR for instructions). There are a bunch of sounds in sound/world you can use (rooster, dog barking, rain, steam, etc…)
well yeah, just make the fog as a normal brush rather than setting the path as a key in worldspawn

Fog: make brush, put fog texture on it. Note that the fog will be restrained to the brush meaning that it won’t fade out with distance if for exemple you put it over your muddy water. It’d be a big block of fog.
Muddy Water: make a texture and a shader for it. Moving water effects usually are a 3 stage shader but I’ve seen with more. Check the shader manual that comes with Radiant.
