I was wondering if you can use multiple gensurf terrains in a single map, and if so how?

You mean draw a brush, make it terrain with Gensurf, draw another brush, make that terrain, and so on? Yes you can do that.

Of course you can. A terrain is just a func_group with some specific keys. Gensurf lets specify where the terrain shows up.
