I tried darksouls. Died a lot. Quit when I got oneshotted by a dragon without any notice that it even existed, much less was hostile.
I tried darksouls 2. Quit when I got beat to death by an old lady with a ladle.

Not really hyped. Stopped playing DS1 after beating Nito and Seth.
Nothing really made me to not continue playing but… yeah, I just kinda forgot about it.

If the rest of the game is full of cheap one shots and the other bullshit that ive heard it is, I’ve no interest in playing it. I will admit though, its absolutely gorgeous and Ive heard the storyline is amazing.

Honstly, Dark Souls is too good that a bad PC port can ruin it.
Also 3 has confirmed 60fps

It… really is the opposite of that. There’s in fact zero cheap deaths in Dark Souls 1, and Dark Souls 2 was criticised by the community for having a boss that makes you take damage you cannot avoid because it’s a melee ranged aura.
If you get oneshot at any point while playing a Souls game, you just forgot to level up HP.
Most likely why you heard this is because the game isn’t Skyrim. The enemies don’t level up with you. So it’s entirely possible to walk into an area that is too high level for you, and get your face eaten off. Dark Souls 1 is famous among the noobery for dropping you off into the central hub and having 3 ways to go. 1 of which the noobs never find even though they look straight at it once they come out of the cinematic (looking at the ground and seeing stairs? Why would you look at the ground). One being the designated way to go… behind you. And one being past the ruins, recommended for after you beat the trial-by-fire boss, and actually meet the blacksmith that can upgrade your gear.
For some reasons, there’s the occasional noob who gets killed in said graveyard and then goes like “Oh Dark Souls is really hard, so this must be fine.” It’s in fact, not fine. You’re just have a critical fail on your perception roll.
