Are there still any blockout maps that we can try in practice mode?
And if so, what name do I use to switch to them?

During the Containment War Update, only one of the unreleased maps could be played, which was Warehouse. (This was removed shortly afterwards)
At the moment, no there are no blockout, or unreleased maps current in the build of Dirty Bomb.
Edit: If one of these maps do come back, or just practice the current maps,
Type in console ‘switchlevel mapname’
IE: OBJ_Whitechapel (Chapel), EXE_Warehouse
